I had an awesome easy recipe for a chicken stew in the crockpot...and i can not find it anymore :(

I would be so grateful if anyone has one?

Quick Chicken Stew

2 lb skinless chicken breasts cut in 1 inch cubes
2 cans fat-free chicken broth
3 cup potatoes; peeled and cubed
1 cup onion; chopped
1 cup celery; sliced
1 cup carrots; slice dthin
1 tsp paprika
1/2 tsp pepper
1/2 tsp rubbed sage
1/2 tsp dried thyme
6 oz no-salt-added tomato paste
---
1/4 cup cold water
3 Tbs cornstarch

In your favorite crockpot, combine the first 11 ingredients; cover and cook on high for 4 hours or low for 8 hours. A half hour before serving, mix water and cornstarch until smooth; stir into stew. Cook, covered, 30 minutes more on high or until the vegetables are tender.


Crockpot Chicken Stew

2 lbs. boneless, skinless chicken breasts, cut in 1-inch chunks
2 large onions, sliced
2 large carrots, cut in 1-inch slices
3 medium potatoes, cut in 1-inch chunks
3-1/2 cups chicken broth
1 tsp celery seed
1 tsp dried thyme
1/2 tsp black pepper
salt to taste
8 ounces sliced mushrooms
1 cup frozen corn
1 cup frozen peas

Combine all ingredients in the crockpot. Stir well.
Cover and cook on LOW 6 to 8 hours until chicken is done and vegetables are tender.
Serves 6 to 8



I make this one a lot!!

CROCKPOT CHICKEN CACCIATORE
2 Med Onions; peeled, sliced t
3 lb Chicken; cut up
2 c Garlic; minced
1 c Tomatoes; 16 oz
1 c Tomato sauce; 8 oz
1 ts Salt
1/4 ts Pepper
1 1/2 ts Dried oregano; crushed
1/2 ts Dried basil; crushed
1 Bay leaf
1/4 c Dry white or red wine...optional
Spaghetti; cooked

Place onions in slow cooker. On top of onions place chicken pieces,
garlic, tomatoes, tomato sauce, salt, pepper, herbs and wine. Cover
pot. Cook on low 6 to 8 hours, or high 3 to 4 hours. Serve chicken
with its sauce on spaghetti which you have prepared.

The recipe I had wasn' these, I think it used campbells soup...but I couldn't find it on their site either...ugggg!

But the recipes you gave me sound good too, so I will have to try one...Thank you again for helping :)

Is the recipe you had, more of a southwestern, veggie or noodle with chicken? Do you remember key ingredients (besides chicken) LOL :yep:
Like seasoning style?
How long did it have to cook?

CROCKPOT SOUTHWESTERN CHICKEN STEW

About 3 boneless skinless chicken breasts (I used 2 cups precooked chicken from the freezer)
1 can Rotel tomatoes
1 can black beans or 1 can of red beans (I used Ranch Style, what we had in the pantry)
2 cans cream of mushroom or cream of chicken soup (I used one can cream of mushroom and one can of cream of poblano pepper, which is made by Campbell's)
2 cans of corn or one bag of frozen corn (it would be good with a combo of yellow and white corn; I just used yellow)
About 2 cups of water or chicken broth (I used water)

Put all ingredients in crockpot. Do not drain cans of corn and beans. Cook on low for about 8 hours. If using whole pieces of chicken, take them out, cut them up, and put them back into the crockpot.

Since I was using precooked chicken, I cooked it on high for an hour and low for about two hours. It was delicious, similar to tortilla soup.

I served it with cornbread.

Crockpot golden chicken with Noodles (Campbells)

From the Campbells webpage, Easy, family friendly dish. — Sep 14, 2003
2 (10.75 ounces) cans campbell cream of chicken soup or 98% fat-free cream of chicken soup
1/2 cup water
1/4 cup lemon juice
1 tablespoon Dijon mustard
1 1/2 teaspoons garlic powder
8 large carrots, thickly sliced
8 boneless chicken breast halves
8 cups hot cooked egg noodles
chopped fresh parsley

1. Mix soup, water, lemon juice, mustard, garlic and carrots in slow cooker.
2. Add chicken and turn to coat.
3. COVER and cook on LOW 7 to 8 hr.
4. or until done.
5. SERVE over noodles.
6. Sprinkle with parsley.
7. Serves 8.

same as modemouths first one but no tomatoe paste or corn starch & and 1/4 cup soy sauce and a dash of tabasco...then we vary it by either adding cooked rice or egg noodles. :yep: oh yes lots of fresh ground pepper and a bay leaf is nice :yep: :yep:
