Cheese Potato Salad
3 cups cooked potatoes, diced
6 hard cooked eggs, sliced
1-1/2 cups celery, diced
1/3 cup sweet pickle, diced
1/4 cup Cheddar cheese, diced
2 tablespoons onion, chopped
1 tablespoon parsley, minced
1 cup salad dressing
1 teaspoon salt
2 tablespoons catsup
1/4 cup dairy sour cream
Combine the first 7 ingredients in a large bowl. In another bowl blend together the remaining ingredients. Pour over the potato mixture. Toss lightly. Chill before serving. Garnish with parsley.
