Cherry Upside Down Cake
this is a cake my grandmother used to fix all the time. Eat it right out of the oven, that is what we always did.

I box of Jiffy Yellow Cake Mix
1 can of Cherry Pie Filling (I have seen her use a jar of marischino cherries, drained; I guess it would be your preference.)



In a 5"x9", 1.5 qt glass dish (one used to make meatloaf or bread) line the bottom of the dish with cherry pie filling or cherries. Pour the cake mix over the cherries.
Bake cake according to directions on box or until toothpick comes out clean.
When cake is done, poke holes in cake with toothpick. Pour 1 minute chocolate icing on top cake and serve.

1 minute chocolate icing:

1 cup of sugar
1/2 cup of Hershey's Unsweeted Cocoa Powder
1/4 cup of milk
1/4 cup of oleo
1 teaspoon vanilla

Combine all ingredients in a saucepan and bring to a rolling boil and stir constantly for 1 minute (do not decrease heat). Remove from heat.

**This can also be used to make frosting for cakes. After removing from heat you can beat it for 3 minutes with electric mixer or until it cools and is consistent enough to spread on cake.
