1 box Penne or other similar pasta
3 c. half and half
salt to taste
pepper to taste
1/8 tsp ground nutmeg
1 c. freshly grated parmesan
2 tbsp butter

Cook pasta according to package directions and drain. Meanwhile, in a
large skillet combine half & half, salt, pepper and nutmeg over medium
heat. Cook, stirring occasionally until large bubbles form, and the
sauce is reduced about 1/3 (about 15 min). Don't boil. Add cheese and
butter and stir to combine. Add pasta and toss.

Now the recipe says to immediately serve, but I like my mac & cheese
baked, so I topped with a bit of mozzarella, poured in a bit more half
& half so it wouldn't dry out, and baked at 375 until golden brown on
top.
