View Full Version : Do you ever roast your veggies?

I put asparagus, carrots, cauliflower, and broccoli on a cookie sheet. Any combo would work. Drizzled olive oil over them and added sea salt and coarsely ground pepper. Baked about 20 min at 400 F. They were different but yummy. DH liked them too. I don't think I have ever cooked veggies that way before.

I have never done it but I heard it was very good. I did see a WW receipe for it once and wanted to try it. It also had roasted potatoes too. Now I am going to have to look for it!

How funny-- I just made a WW recipe the other night with asparagus, tofu and radishes, and I roasted potatoes on the side. I love roasted veggies!

I just made roasted cauliflower & red onions Sunday and the family loved them. (Hubby and DD, who is home on a visit from Yellowstone)

I just tried it with potatos and carrots. DH thought they were fantastic!

I never thought of that. I always just grill them olive oil , salt pepper and minced garlic. I always use sun dried tomatoes too.
