Plath, can you post yours? DH ate some recently and I can't find a good recipe.

Yep, here you go :) I originally got the recipe online, but I've changed so many things about it, it's pretty much mine now.
2 boxes frozen spinach, thawed and drained well
1/4 c. butter
1 small onion, minced
1 TB minced garlic
1/4 c. flour
1 pint heavy cream
1/4 c. milk
2 tsp lemon juice
2/3 c. parmesan cheese (not the boxed stuff)
1/4 c. sour cream
1/2 cup or more shredded Italian cheese blend
1 can artichoke hearts,drained and coursely chopped
Preheat oven to 375
Over medium heat, saute garlic and onions in the butter until golden. Stir in flour and cook 1 minute. Slowly whisk in cream and milk and continue cooking until boiling. Once boiling, stir in lemon juice, and parmesan cheese, stir until cheese is melted. Remove from heat and allow to cool for 5 minutes. Stir in sour cream, then fold in dry spinach and artichoke hearts. Sprinkle Italian cheese over top. Bake in oven for about 25 minutes or until browned.

:tyspin: That sounds really good. My DH hates mayo so it's nice to see a recipe that isn't mayo based.

My dh hates spinach artichoke dip made with mayo, too. He really likes this one and requests it all the time.

MY DH loves mayo. I hate the tasteless greasy feel in my mouth. Give me some Miracle Whip with zip!
