1. Place into a blender and blend until smooth:
- 1-15 ounce can of pinto beans (rinsed and drained)
- 2 egg whites OR egg substitutes equal to 2 eggs OR 1 tablespoon of Ener-G egg replacer to 2 tablespoons of water
- 1 cup brown sugar
- 1/4 cup pureed plums
- 2 teaspoons real vanilla

2. In a large bowl, stir together the following dry ingredients:
- 1 cup whole wheat pastry flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon allspice

3. Add pureed bean mixture to dry ingredients and stir thoroughly.

4. Add the apples, raisins, and nuts:
- 2 cups peeled and diced apples
- 1 cup raisins or dates
- 1/2 cup chopped walnuts

5. Pour into a 9x18 pan that has been lightly sprayed with olive oil. Bake in a preheated oven at 350F for 25 to 30 minutes or until a toothpick inserted in center comes out clean. Remove cake from oven and place on a wire rack to cool.
