View Full Version : TGIF, May 14 ... what's for dinner?

What's everybody having? Here are my choices:

#1. Last night right before going to bed, I sweated some poblano peppers. Tonight I'm going to peel them, and cut them in strips, and add them to some queso fresco and monterey jack cheese then make enchiladas with corn tortillas. From last night's leftover pinto beans I'll make refried beans, and probably make some rice too.

OR

#2. We have leftover macaroni and cheese from the other day, and wheat rolls. I can make some more baked tomatoes, maybe make a salad (Debbie has me wanting cucumbers and onions in oil and vinegar now). I guess I could also make some broccoli or something to go with it, just to add in another vegetable.

There are still a few hours before decision time.

New Orleans Jambalaya with shrimp, organic Caesar salad, Oh. I think, I'm going to have to have strawberry romanoff

1/2 cup of sour cream, 3 tablespoons of brown sugar and 1 tablespoon of brandy. hand stir. makes 2 servings

I made roast beef hash from the leftover roast we had on Wednesday night. DH had eggs on top of his. I made baked beans on the side and we both had toast, so I guess we basically had breakfast for dinner.
I notice you're 4 for 4 Zippi...:bs:

Well, we were going to do a weanie roast but it was pouring rain. So I cooked the hot dogs in the house and made potato salad and pasta salad for those that don't eat the potato salad. Neither one of the kids ate the potato salad. For dessert we had s'mores - roasted the marshmellows on the stove. :)

Thanks for the recipe, Zippi. I wrote it down - I'll make it Monday.

Haha! There's always a hidden option #3!

Funny thing though, when we walked into the restaurant, our waitress Bianca had already set the table for us with our "secret" sauces, and what we drink. She saw us coming in from the parking lot and knows our favorite table. If it's mealtime and we aren't at home, we're at this place so no wonder they know us so well. And Bianca's mom is the one who cleans our house (and cooks for us when she's done) so ... yeah, we should probably buy the place. ;)
