3 Chicken breasts ( cut up to your desired size)
2 tbsp ketchup
1/4 tsp ginger
3/4 tsp red pepper ( or less if you dont want it too spicy)
1 tbsp cider vinegar
1 garlic clove crushed
1/4 cup apple juice
1/2 cup water
1/3 cup soy sauce
1/3 cup brown sugar
First you cook the chicken in a skillet with some oil. Then put the chicken to the side. Mix all the ingredients in the skillet and bring to a boil mixing frequently. Add the chicken to the sauce and simmer for about 30 minutes on medium/low heat. Serve over rice. ENJOY!!!!
I usually double the sauce recipe so we have some to pour over the rice. This amount is enough for me and my DH and leftover for lunch the next day :)
