Guess I'd better resume this thread since I'm needing to heal a few things via diet. My mom's doctor has put her on an interesting regime and says he can reverse her Type II diabetes, and get her off of every Rx that she's currently on. That includes meds for high blood pressure, fibromyalgia, and of course the diabetes too. He prescribes according to The China Study by T. Colin Campbell. It's mainly vegetarian and eliminates all animal products, including eggs and dairy. Breakfast is whole grain cereal (or bread), fruit and a handful of nuts, lunch is beans, vegetables, and whole grain bread, and dinner is small -- a snack (popcorn, nuts, whole grain toast) and some fruit. He isn't my doctor but I would also like to get off of all prescription drugs, plus the possibility of arresting and reversing some of these other genetic health problems is very alluring. When I get straightened out on the current issues, I am considering making him my PCP. He's a little farther away than my current doctor but he believes in preventing problems thru diet instead of just medicating.

So here's my dinner tonight:

15 bean soup mix, wild and long grain rice, portabello mushrooms stuffed with spinach, sliced tomatoes and onions. I'll make some green tea in a little bit too.

Kathy I don't know if I could go without ANY animal products. Sometimes the taste of meat turns my stomach but I don't think I could do with eggs and butter. I had read a study about a year ago talking about dairy/milk specifically and it said that we are the only "animals" that drink another specis' milk, consume milk into adulthood, and it also said that being able to digest it is acquired - that there are cultures/civilizations in the world who do not drink milk and if/when they do they can't digest it. In other words - if you are lactose intolerant that is more natural than being able to digest it.
