I haven't had this since childhood, but tonight I just wanted salmon croquettes. I mixed a can of pink salmon, an egg, half of an onion chopped, and a few random spices ... rolled in bread crumbs and then baked them for about 20 minutes at 400. It was just absolutely heaven! My mom used to put them in cornmeal and fried them, but I decided we'd be a little healthier and Judd doesn't like cornmeal coating anyway. We had roasted potatoes and onions, and Ranch Style beans too. YUMMMMMMMM!
Oh, the best part? Judd's out of town until Thursday and I have leftovers for the next two nights.

My grandma used to cook these but she called them simply fried salmon. We always had homemade mashed potatoes and biscuits with it. She was such a good cook!

Who knew there was a word for them? We call them fish cakes. LOL I like Jack Mackerel better than Salmon though.

For a little bit of culinary trivia, a similar word, "croque" means crunchy. It's like a grilled cheese sandwich that's dipped and fried, sort of like the monte cristo sandwich. A croque-monsieur is ham and cheese, dipped and fried, and a croque-madame is the same but is served with a fried or poached egg on top.
See, I didn't spend $10,000 on culinary school and not learn anything!!! LOL!!
