1/2 pound of butter
1 cup of buttermilk
2 tablespoons of corn syrup
3 cups of sugar
1 teaspoon of baking soda
pinch of salt
4 cups of pecan halves

in a large heavy sauce pot, like a soup pot, it swells up while cooking, melt butter then add the buttermilk. add everything else except the pecans. boil for about 20 minutes stirring occasionally till soft boil stage 235 degrees. Place pot in a sink of cold water stir for 5 minutes. then add the pecans. place small scoops on wax paper. They are fussy if it is raining, sometimes it takes overnight for them to harden. never keep them in plastic wrap only wax paper.

Alrighty then, I'm making some tonight. I hope they behave for me because I think rain is predicted.

Made them. I must say that around here, it might have been a two person job. They cooperated for the first half of the pot and then started setting up! YIKES! I ended up scooping the rest of the pot into a cake pan and smashing it down with the wax paper. I'll cut or crumble it up later. However, the first half (one whole sheet of wax paper) is perfect. Not runny or chewy or anything. They are sugary which is the exact way I like them.

Next time I'll cook initially for only about 15 minutes on a slower boil and see how that works.

Now I'm in a sugar coma from eating all the little droplets that fell, and licking the spoon, and trying one from each sheet of paper, and cleaning out the pot before putting it in the sink.

I'm sure you will be taking some to work, I hear that they are great with coffee. They are very addictive.

Yes, I am. I used to make them when I lived in southeast Texas (it's a staple in Beaumont and Orange) but haven't done it in years so I don't have a good recipe anymore. Plus I couldn't find my candy therm and had to use the meat therm which only goes up to 230 ... so I'll go get one before making the next batch.
