I didn't want to give everyone leftover turkey and dressing AGAIN ... so I cooked something else.
Tarragon chicken
Duchesse potatoes
Green beans
Rolls
Tarragon chicken - brown chicken breasts in oil, take them out. Deglaze the pan with 3/4 cup of white wine, then add 2 T. dijon mustard, 2 T. chopped tarragon and 3/4 cup of heavy cream. Whisk that all together and put the chicken back in. Let it cook together for a while. To serve, place the chicken on the plate and then spoon the tarragon sauce over it. Very good and easy.
Duchesse potatoes - I used leftover mashed potatoes but you can make them fresh. To the potatoes, add 1-2 eggs and 1 t. nutmeg. Mix well, then put them in a piping bag. Pipe in swirly piles (descriptive enough?) on a sheet of parchment paper that's on a sheet pan. Bake at 400 for 15 minutes or so, and if you need to, turn on the broiler at the end. You can also brush with egg white for extra browning.
