3-1/3 cups of flour
4 t. cinnamon
2 t. baking soda
1 t. baking powdeer
1-1/2 t. salt
2-2/3 cups sugar
2/3 cup vegetable oil
4 eggs
1 can pumpkin (15 oz.)
2/3 cup water
Sift dry ingredients. Beat sugar and oil together (it'll still look dry). Add eggs one at a time until blended. Add pumpkin and mix thoroughly. Add dry ingredients a little at a time, alternating with water.
Pour batter into two loaf pans. Bake 325º for 55-60 minutes.
You can also use four mini loaf pans, but fill half full and bake for 25-30 minutes.
