I'm going to try and keep this up -- and when necessary I'll also post recipes.
Post your dinner menu, great or small! We all need ideas and it helps to get inspiration from what everyone else is having. I get stuck in a rut sometimes and when someone else posts what they're having, it gives me a lot of different ideas.
SO JOIN IN!!

last night we had crockpot stroganoff which was delish...
Beef stroganoff recipe for the crockpot, with round steak and sour cream, along with mushrooms and other seasonings.
Ingredients:
3 lb. beef round steak, 1/2 inch thick or sirloin strips
1/2 c. flour
2 tsp. salt
1/8 tsp. pepper
1/2 tsp. dry mustard *Coleman's is the BEST*
2 med. onions, thinly sliced and separated into rings
2 (4 oz. each) cans sliced mushrooms, drained or 8 ounces fresh sliced mushrooms (I prefer fresh)
1 (10 1/2 oz.) can condensed beef broth
2 to 4 tablespoons dry white wine, optional. (I use red.)
1 1/2 c. sour cream
1/4 c. flour
Preparation:
Trim all excess fat from steak and cut into-3 inch strips about 1/2-inch wide. Combine 1/2 cup flour, the salt, pepper and dry mustard; toss with steak strips to coat thoroughly. Place coated steak strips in Crock Pot; stir in onion rings and mushrooms.
Add beef broth and wine; stir well. Cover and cook on low setting for 8-10 hours. Before serving, combine sour cream with 1/4 cup flour; stir into slow cooker. Serve stroganoff with hot cooked rice or noodles.

tonight it's Spicy Hot and Sour Soup which is a family fav...
"Tweaked" Spicy Hot And Sour Soup
INGREDIENTS:
5 dried wood ear mushrooms
4 dried shiitake mushrooms
8 dried tiger lily buds
or regular canned or fresh sliced mushrooms
(Actually ANY mushroom will do but I prefer at least a couple kinds)
4 cups chicken stock
1/3 cup diced bamboo shoots in a can
1/3 cup lean ground. (this stuff is gross IMHO. I prefer thin slices of pork or you can omit meat)
1 teaspoon soy sauce
1/2 teaspoon white sugar
1 teaspoon salt
1/2 teaspoon ground white
pepper
2 tablespoons red wine
(that did not impart the right taste. Use rice wine vinegar instead)
2 tablespoons cornstarch
3 tablespoons water
1/2 (16 ounce) package firm
tofu, cubed
1 egg, lightly beaten
1 teaspoon sesame oil
2 tablespoons thinly sliced
green onion
DIRECTIONS:
1.Soak the dried mushrooms and tiger lily buds in warm water for 20 minutes. After trimming off any tough stems, slice the mushrooms. With the fingers, shred the tiger lily stems.2.Place the mushrooms, tiger lily buds, stock, bamboo shoots, and shredded pork into a saucepan. Bring to a boil, and simmer for 10 minutes.3.Stir in soy sauce, sugar, salt, white pepper, and vinegar. Combine cornstarch with 3 tablespoons water. Add a little of the hot soup to the cornstarch, and then return all to the pan. Heat to boiling, stirring. Add the bean curd, and cook 1 to 2 minutes.4.Just before serving, turn off the heat. Stir the egg in gradually. Mix in sesame oil. Sprinkle each serving with scallions.
I added extra soy sauce and vinegar.
Also, I have to have crushed red pepper to taste.
DH finished this stuff for breakfast this a.m. http://www.mybargainbuddy.com/forums/images/smilies/laughing-smiley-016.gif

My kids have been on a Cocoa Pebbles diet this evening. I know, not very good dinner but at least they are eating something.
I haven't had anything yet but am thinking of a baked potato with chili and some cheese on it. I am cold and some chili sounds good!

We had goulash and green beans.
Goulash
Brown some hamburger (we used ground turkey) while you boil elbow noodles. Add 2 cans tomato sauce, 1/4 c. brown sugar, 2 TB chili powder, some onion flakes, garlic powder, salt and pepper to taste. Dump in the elbow noodles, and mix in a cup of shredded cheddar. Voila, dinner is served!

tonight it's spicy Cajun shrimp (can use chicken)
Fiery Cajun Shrimp
2 cups melted butter
1/2 cup Worcestershire sauce
1/4 cup fresh lemon juice
1/4 cup ground black pepper
1 tsp. ground rosemary
2 teaspoons hot sauce
4 garlic cloves, minced
2 teaspoons salt
5 pounds unpeeled shrimp (use the largest shrimp you can get)
2 thinly sliced lemons
Mix all ingredients but shrimp and lemon slices in melted butter. Put half the shrimp in a pan (9- by 13- by 2-inch baking pan), pour half the sauce mixture over the shrimp. Put half the lemon slices on top. Place the rest of the shrimp, sauce and lemon slices on top of first layer.
Bake uncovered at 400° F. for 20 minutes, stirring twice.
Pour sauce into individual serving bowls; serve with French bread for dipping.
I added some red pepper flakes for extra fire...it was delicious. If you have extra sauce it keeps in the fridge for a couple weeks and you can use it over chicken or other fish or seafood.

I did just ordered DH a gallon of fresh shucked oysters and I imagine we will be piggies. I hope I can freeze oysters. :donno:

When we lived in Tennessee (as a child) we had a huge garden. My dad didn't grow kale, but he did grow mustard, collard, and turnip greens. Nothing is as good as fresh greens.

Saturday morning breakfast. YUMMO zippiboy had went to dream dinners this week to make my meals for the month. He made me a tray of raspberry French toast with cream cheese and toasted almonds. I also had fresh squeezed organic orange juice. A Friend had brought them over from her tree. I never used to be big about breakfast but I'm starting to really like it.
