Oatmeal Banana Bread
This banana bread recipe is made easier with biscuit mix. Scroll down the page for more recipes.

* 2 cups biscuit mix, such as Bisquick
* 1 cup quick cooking rolled oats
* 1/2 cup chopped pecans or walnuts
* 1/4 cup butter
* 1/2 cup sugar
* 2 eggs
* 2 large ripe bananas, mashed, 1 cup
* 1/4 cup milk




Combine biscuit mix, rolled oats, and chopped pecans or walnuts; set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time; stir in the bananas and milk. Add dry ingredients all at once, stirring just until moistened. Put batter into a greased and floured 9x5x3-inch loaf pan. Bake at 350° for 35 to 45 minutes, or until a wooden pick or cake tester inserted in center of banana bread comes out clean. This banana bread recipe makes 1 loaf.

I am eating this right now. Yummmmm......

DD is on a high fiber diet and I am TRYING to teach her what to eat. She is coming for dinner after teaching art history and I am going to give her lots of fiber. :yep:
