I think I'll start this up again. It helps give me ideas and maybe might help others too.

Tonight I made Coddle, steamed broccoli and carrots, and Red Lobster cheddar bay biscuits.

Coddle:
sliced smoked sausage (I used a sausage from our Walmart Neighborhood Market that is chicken, apple and gouda)
sliced potatoes -- use waxy rather than mealy potatoes, like a new potato or Yukon gold instead of russet
sliced onions
leeks
parsley
Mixed it all up, put it in a 9x13 baking dish, drizzled some olive oil all over, covered with foil and baked. After a while, I took it out and sprinkled some fresh parmesan over the top and returned it to the oven.

Cheddar Bay biscuits:
2 cups Bisquik
2/3 cups milk
1/2 cup grated cheddar
1/4 cup melted butter
garlic salt
parsley flakes
Bake at 450 for 8 minutes. I put foil on a cookie sheet and spray with Pam, then drop the dough by teaspoonful. Before baking I brushed with more melted buter that has garlic salt in it.
