View Full Version : Nobody eats? Let's start it again ...

I really need ideas and I know you all have them.

Here's my week so far:

Sunday night --
Chicken parmesan: chicken breasts, pounded down, slopped in olive oil and an egg, then breadcrumbs; then fried in oil. I blotted them very well after they came out. Topped with marinara sauce and mozzarella cheese, then baked til the cheese melted.
Spinach and cheese tortellini
Steamed squash

Monday night --
Baked cod
Baked sweet potatoes
Salad
Garlic bread

Tonight --
Oven baked scallops: first, I melted some butter in a skillet, then added bread crumbs and mixed it up. I put the scallops in a sprayed baking dish and topped with the bread crumb mixture and baked
Angel hair pasta with garlic and olive oil
Green beans (actually these are called asparagus beans -- very long and thin. A friend at work grows them.) I added some fresh garlic and olive oil
Fried green tomatoes. Judd will hate this but it reminds me of my childhood, and I had four tomatoes on the vine that absolutely would not ripen.

Tonight is the first night we cooked
Barbecue chicken and sausage corn on the cob

Now, see? That's what I'm talking about!

I haven't thought about BBQ chicken in a while ... and so now it's on my list for the weekend.

It's Summer, So we are living off of Hamburgers, hotdogs and anything else we can fit on the grill.

Sunday:
dh grilled salmon for me and steaks for him and the famous drag race driver who stayed at our house (who is HOT!) :laugh1: plus we had salad and corn on the cob

Monday:
dh made salmon and fried zuchini (that he burnt :yep:)

Tuesday:
lowcarb spaghetti and sprouted grain garlic bread

Wednesday:
we'll probably grill out unless it rains all day (and it might)

I'm supposed to remember what I made on Monday? Yikes!!Let me think a minute here...oh yeah, I made homemade pepperoni pizza. Last nite was a quick and easy one, hot dogs, potatoes, and onion frittata with a salad. Tonight I'm making pork sirloin, mushrooms and gravy over egg noodles.
(The family is coming tomorrow, so we'll do the cook-out thing then.)

sunday we grilled t-bones and had a green salad

Monday it was fried (yes fried) egg sandwichs.

Tuesday we got sides from Popeyes chicken...we passed on the chicken

Wednesday we are having steak kabobs. DS is marinating the beef and will be our grillmaster.

Thursday..........um. Something quick and easy maybe we'll make subs, not sure.

Friday will probably be pizza and over the weekend it will probably be burgers and hots dogs with potato salad and/or pasta salad.

One of my favorites! I love fried eggs and peppers on a sandwich, yummy!

Fried egg sandwiches are proof that God loves us and wants us to be happy. Okay, I know that's supposed to be BEER ... but I think the sammichs are a very close second.

And I'm off to start a July 4th thread for today!

Well, we went down to the Mall (Washington DC) on the Fourth. We ate at the Native American Museum. They have a restaurant that features Native foods from all over North and South America. Was very yummy and very expensive, too. ;)
