Tonight we are having Beef Burgundy in the crock pot ~
2 slices bacon, diced
2 pounds lean stew beef, sirloin tip or round steak cut into 1 inch pieces
1/4 cup flour
1 tsp salt
1/4 teasp marjoram
1/4 tsp thyme
1/4 tsp pepper
1 clove garlic minced
1 bef bouillon cube ~ crushed
1 cup dry red wine
4 - 6 ouces fresh mushrooms
2 Tbs. cornstarch, Optional
In skillet cook bacon several minutes. Remove and set aside. Coat beef with flour and brown on all sides in bacon drippings. Combine beef, bacon and drippings, seasonings, bouillon and wine in crockpot.
Cover and cook on low 6 - 8 hours. Add mushrooms and cook on high for 30 - 45 minutes longer. To thicken sauce, add cornstarch (dissolved in 2 Tbl cold water).
We are going to have it over noodles with a salad. YUM!
