I got this out of a low carb cookbook I just bought and tried it the other day. It was really good!
Chicken Stuffed with Pesto
6 (5 oz) boneless, skinless chicken breast halves
salt and pepper to taste
3 Tbsp whipped cream cheese
6 Tbsp pesto sauce (I used the Classico jarred stuff)
1/2 c. Parmesean cheese
1/2 tsp paprika
Rinse and pat dry chicken. Place between 2 sheets of heavy duty plastic wrap, and using a meat mallet, flatten each to 1/8 inch thickness.
Combine cream cheese and pesto until well mixed. Divide among the chicken breasts and spread over them evenly. Combine the Parmesean cheese and paprika in a shallow dish. Roll up the chicken pieces crosswise and roll in cheese mix. Place in dish, seam sides down.
Bake 30-35 min at 350 degrees.
PER SERVING (makes 6 servings): 1g. carbs, 50g. protein, 16 g fat, 360 calories
