I bought fresh Thyme and rosemary last night. I love rosemary!!! Do any of you have any recipes or suggestions for using either of these herbs?

I love fresh rosemary! I put it in beef stew and chicken dishes.
I will look up a few recipes tomorrow for you.

There's that sticky rosemary chicken recipe where you loosen the skin on a whole chicken and put the rosemary under it, then bake. The recipe is somewhere here; I'll see if I can find it or maybe someone else has it. It was a board favorite a few years ago.
I have a huge bush of rosemary outside my front door. It is good on practically every type of meat you bake, like pork tenderloin, etc.

rosemary is wonderful in potatoes-- roasted, boiled or potato soup.

Sautéed Scallops with Rosemary & Lemon
1 pound of fresh or frozen scallops
2 tablespoons extra virgin olive oil
1 clove garlic, peeled and sliced
3/4 teaspoon dried rosemary
salt and freshly ground pepper
1 tablespoon lemon juice
Put the oil and the garlic in a frying pan and cook the garlic until golden. Add the rosemary, scallops, salt and pepper and cook over a high heat until they are cooked, about 2-3 minutes. Add the lemon juice and turn up the heat for a few seconds. Serve hot.
Beef Stew
1/4 cup olive oil
1-1/2 pounds boneless beef chuck cut into 1-1/2-inch cubes
2 Tbsp all-purpose flour
12 ounces small white onions, peeled
1 pound tomatoes, peeled, seeded, and chopped
3 garlic cloves, minced
2-1/2 Tbsp chopped fresh thyme OR 1 tsp dried thyme
2-1/2 Tbsp chopped fresh rosemary OR 1 tsp dried rosemary
2-1/2 Tbsp chopped fresh oregano OR 1 tsp dried oregano
1 bay leaf, crumbled
1 tsp ground cumin
2 cups dry red wine
1/2 pound feta cheese, crumbled
Salt and freshly ground pepper
Preheat over to 350 degrees F.
Heat oil in heavy 4- to 5-quart Dutch oven over medium high heat. Toss beef with flour in large bowl. Add beef to pan in batches and cook until brown, stirring occasionally, about 3 minutes per batch. Transfer browned beef to bowl. Add onions to pan and cook until light brown, stirring frequently, about 5 minutes. Add tomatoes, garlic, herbs and cumin to pan. Stir in wine and bring to a boil. Cover and bake in oven until beef is tender, about 2 hours. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm to 350-degree F oven before continuing.)
Stir feta into stew. Return to oven and continue baking until cheese is heated through, about 10 minutes. Season with salt and pepper and serve.
