Bean & Cheese Enchiladas:
1 large can Old El Paso Mild Enchilada Sauce
1 package Chi Chis Restaurant Seasoning (click here: http://chichissalsa.com/products_seasonmix.html if you don't know what that is)
1 package small flour tortillas
1 can black beans, drained and rinsed
1 8 oz package Monterey Jack Cheese
1 8 oz package Cheddar Cheese
Preheat oven to 375. Mix enchilada sauce and restaurant seasoning in medium bowl. Microwave for 2 1/2 minutes and stir well. Microwave flour tortillas to soften. Spoon 1 TB (approx) sauce mix onto each tortilla, spoon 1 TB beans on top, top with a sprinkle of each cheese, and roll, placing each tortilla seam side down in a large baking dish. Pour over remaining sauce mix, and top with remaining cheese. Bake in oven for 25 minutes, or until lightly browned and cheese is bubbly
